In one of our What We’re Cooking and Eating Now episodes, Stacie mentions discovering a Bisquick Apple Coffee Cake recipe at Simply Recipes. She found it while searching for a super quick recipe one night when she desperately wanted cake — but didn’t want to work hard to make one. The recipe was a revelation.
(Though, side note: If you make it, know that Stacie’s entire family thought it needed significantly more sugar to taste more like cake and less like a fluffy cake-like pancake.)
Inspired by the act of making a cake batter in one bowl in just five minutes, we stared experimented with making cakes using Bisquick. Like the recipe that Stacie followed on Simply Recipes, most recipes we found online were for coffee cake, but we wanted something more classic: an everyday cake that you can frost with a tub of store-bought icing and serve as a treat on any given weeknight.
When we couldn’t find one, we made it ourselves!

Ingredients
Butter or cooking spray, for greasing the pan
2 cups Original Bisquick mix
1 cup sugar
2/3 cups milk
1 eggs
1 teaspoons vanilla extract
Zest of 1 lemon (optional)
Frosting of choice, about 2 cups or one 16-ounce tub
Instructions
1. Heat oven to 350°F. Grease an 8-inch square pan with butter or cooking spray. In medium bowl, stir together Bisquick mix, sugar, milk, eggs, and vanilla extract. Whisk until well combined.
2. Pour the batter into the prepared pan. Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center of the cake comes out clean.
3. Remove cake from oven and allow to cool before frosting and serving.
