Maybe it’s the grapes? Or the fresh dill? Or the combo of mayo and sour cream (creme fraiche if you’re fancy!). Whatever the answer, this salad piled high onto a flaky croissant or hearty roll most definitely satisfies as dinner.
But make a double batch: You’ll want it for lunch the next day too!

Ingredients
1 cup chopped or shredded chicken (poached, leftover, rotisserie)
2 tablespoons chopped chives or scallions, green parts only
1/2 cup chopped grapes
1/4 cup toasted slivered almonds
3 tablespoons mayonnaise
2 tablespoons chopped fresh dill
2 teaspoons Dijon mustard
2 teaspoons sour cream
Salt
Freshly ground black pepper
Instructions
- Add the chicken, chives, grapes, almonds, mayonnaise, dill, mustard, and sour cream to a medium mixing bowl. Using a wooden spoon or silicone spatula, gently fold until well combined. Season with salt and pepper as desired. Serve on your bread of choice — or eat straight out of the bowl.
