Everyday One-Bowl Cake Recipe

This basic vanilla cake is an awesome everyday cake that you can dress up for so many occasions — or just make as a snack. It makes an ideal 13×9 sheet cake, or can be turned into 12 cupcakes (bake for 16 to 18 minutes) or two 8-inch rounds (bake for about 25 minutes).

Everyday One-Bowl Cake

Ingredients

Scale

1 cup oil 
2 cups sugar 
4 eggs 
1 teaspoon vanilla extract 
3 cups all-purpose flour 
1 tablespoon baking power 
1 teaspoon salt 
11/4 cup milk


Instructions

1. Arrange a rack in the middle of the oven and heat to 350°F. Coat a 13×18-inch rimmed baking sheet with cooking spray; set aside.

2. Whisk together the oil, sugar, eggs, and vanilla in a large mixing bowl until smooth. Add the flour, baking powder, and salt and whisk until mostly incorporated, though some lumps will remain. Gently whisk in the milk until smooth.

3. Pour the batter into the prepped baking pan and bake until the cake is lightly browned and springs back when lightly pressed, 20 to 25 minutes. Cool the cake on a wire rack while preparing the frosting.
