Quick and Easy Mini Pizza Bagels

Several of you asked for this recipe after Meghan shared these on our Instagram as one of her favorite lunches for her two kiddos. Pack these with a paper towel to wick away any moisture created by steam in the lunch box or make them the night before and send cold. These also make excellent sleepover snacks or a quick weeknight dinner along side a bagged salad.

Description

Several of you asked for this recipe after Meghan shared these on our Instagram as one of her favorite lunches for her two kiddos. Pack these with a paper towel to wick away any moisture created by steam in the lunch box or make them the night before and send cold. These also make excellent sleepover snacks or a quick weeknight dinner along side a bagged salad.


Ingredients

Scale

10 to 12 plain mini bagels, halved
1 cup pizza sauce or your favorite marinara
2 cups (8 ounces) shredded mozzarella cheese
½ cup (2 ounces) finely grated parmesan cheese.
Toppings such as: mini pepperoni, cooked sausage, olives, diced peppers, garlic, baby spinach


Instructions

  1. Heat the oven to 375°F.

  2. Layout bagel halves on a baking sheet. Toast the bagels for 3 to 4 minutes in the hot oven until just beginning to brown.

  3. Carefully top each bagel half with equal amounts of pizza sauce, pepperoni and mozzarella cheese.

  4. Bake for about 10 minutes or until the cheese is melted and slightly browned.

  5. Add the parmesan cheese while the pizza bagels are still hot. Cool slightly and serve.
  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
