The pudding doesn’t have to be vegan, but you also don’t have to be a vegan eater to love it. In the spirit of making small changes where you can manage them, we’re sharing a delicious plant-based treat that everyone will love, regardless of your primary diet choices.

Also, it comes together so much faster and easier than traditional pudding, so it’s a win-win!

Be sure to subscribe to our newsletter so that you also receive our bonus recipe — we sent out one a week, plus a new favorite product of the week too.

Recipe: Vegan Chocolate-Peanut Butter Pudding

  • Author: Stacie and Meghan

Ingredients

Scale

1/2 cup chocolate chips (use dairy-free chocolate for a vegan version)
1 lb silken tofu
2 tablespoons maple syrup
1 tablespoon creamy peanut butter
1/2 teaspoon pure vanilla extract

Instructions

1. Melt chocolate chips in the microwave or using a double boiler. Allow to cool to the touch.

2. Add melted chocolate, tofu, syrup, peanut butter, and vanilla to a food processor or powerful blender. Puree until completely smooth. It will be thin and pourable; don’t worry, it will firm up.

3. Transfer pudding to one large or four individual containers, cover, and allow to set in the fridge for at least 30 minutes before serving.

Notes

Note: You can swap the maple syrup for honey or other liquid of your choice.
