Several of you asked for this recipe after Meghan shared these on our Instagram as one of her favorite lunches for her two kiddos. Pack these with a paper towel to wick away any moisture created by steam in the lunch box or make them the night before and send cold. These also make excellent sleepover snacks or a quick weeknight dinner along side a bagged salad.
Ingredients
10 to 12 plain mini bagels, halved
1 cup pizza sauce or your favorite marinara
2 cups (8 ounces) shredded mozzarella cheese
½ cup (2 ounces) finely grated parmesan cheese.
Toppings such as: mini pepperoni, cooked sausage, olives, diced peppers, garlic, baby spinach
Instructions
- Heat the oven to 375°F.
- Layout bagel halves on a baking sheet. Toast the bagels for 3 to 4 minutes in the hot oven until just beginning to brown.
- Carefully top each bagel half with equal amounts of pizza sauce, pepperoni and mozzarella cheese.
- Bake for about 10 minutes or until the cheese is melted and slightly browned.
- Add the parmesan cheese while the pizza bagels are still hot. Cool slightly and serve.
