Our Favorite Peanut Sauce Sauce for Noodles and More

Share This:

In a recent What We’re Cooking and Eating Now episode, we each shared our peanut noodles origin story. Meghan had learned her favorite version from chefs she worked with before culinary school and Stacie had been using Sara Moulton’s recipe for at least a decade. The recipe below is a combination of the two that totally satisfies your peanut noodle craving. Use this recipe to toss hot or cold noodles, or as dipping sauce for grilled kebabs, spring rolls, and more.

Description

This is our favorite peanut sauce recipe for cold peanut noodles, but it also makes a great dressing for salads, dip for spring rolls, or a spread for wrapped sandwiches.

Ingredients

Scale

3 scallions, white and green parts, trimmed and finely chopped
¾ cup smooth peanut butter
½ cup hoisin sauce
Juice of 1 lemon
1 tablespoon low sodium soy sauce
2 teaspoons sesame oil
1-2 teaspoons garlic chili sauce, optional

Instructions

  1. Combine the ingredients in a medium mixing bowl and whisk together. The mixture will be thick! Add room temperature water, one tablespoon at a time, until desired consistency; this may take up to 1/3 cup water. You can use this right away or it keeps well in the fridge for up to 7 days.
