We both love a classic Gold Rush cocktail but we wanted to dress this classic cocktail up a bit for the holidays with a ginger-spiced honey syrup you’ll love. Make the honey and ginger syrup in advance and pulling together this cocktail takes just a few minutes at happy hour or before dinner. We also love making big batches of the syrup to give as a delicious gift. Cheers!
11/2 cups honey 1 cup water 1/4 cup chopped fresh ginger, about 1 (3-inch) hand 1 tablespoon finely zested lemon zest, from one lemon
