Greek Yogurt Breakfast Popsicles
Description
We can’t think of a better season to serve popsicles for breakfast than summer. These yogurt based popsicles are a win for parents with easy ingredients and lots of flexibility. Plus kids love the sprinkles so much they likely won’t notice the chia seeds mixed in!
Ingredients
2 cups greek yogurt
¼ cup honey or maple syrup
2 tablespoon fruit jam, optional
2 tablespoons chia seeds
¼ cup rainbow sprinkles
Instructions
- In a medium mixing bowl combine the Greek yogurt, honey, jam (if using) and chia seeds. Whisk together until smooth.
- Fold the sprinkles into the yogurt mixture.
- Divide the yogurt mixture between the cups of your favorite popsicle mold and add the popsicle sticks.
- Freeze the popsicles for at least 12 hours, ideally overnight.
Notes
After freezing, the popsicles can be removed from their mold and stored in an airtight container for up to 3 months.
