We know: it’s a green smoothie, but maybe it helps to know that it also tastes like apple pie? This power-packed smoothie is one of Stacie’s kids’ favorite ways to start the day, so she always keeps the ingredients on hand. It’s the perfect way to use up the last fistfuls of baby spinach languishing in your fridge; stuff them into a baggie, pop them into the freezer and you always have what you need to give this smoothie its power boost.

This power-packed smoothie is one of Stacie’s kids’ favorite ways to start the day, so she always keeps the ingredients on hand. It’s the perfect way to use up the last fistfuls of baby spinach languishing in your fridge; stuff them into a baggie, pop them into the freezer and you always have what you need to give this smoothie its power boost.


Ingredients

Scale

1 fresh apple
1 cup baby spinach
2 tablespoons almond butter
½ apple pie spice, you can substitute pumpkin pie spice or ground cinnamon
1 cup apple cider
1 teaspoon vanilla extract
1 to 1 1/2 cups ice


Instructions

  1. Cut the apple into 4 pieces around the core; there’s no need to peel it. Add the apple pieces to a blender with all of the other ingredients and blend until smooth. Serve immediately.

Notes

You can boost this smoothie with chia seeds, flax seeds, hemp seeds, protein powder (unflavored or vanilla preferred), bee pollen and/or whatever else you like to add to your smoothies, so long as the flavor is neutral or matches a vanilla-cinnamon flavor profile
