Inspired by TikTok, we’ve developed our version of a Spicy Beef Ramen dish that comes together to make a satisfying dinner in all of 15 minutes. You pretty much only need garlic, ginger, and garlic-chili sauce to flavor this dish (white pepper helps more than you’d think too!). From there, you can riff until your heart’s content: add soy sauce, finish with rice vinegar or fresh lime juice, garnish with cilantro, or top with a fried egg. Whatever you like. Go wild. But at the end of the day, if all you do is follow this super simple recipe as written, you’ll be happy. We promise.

Description

Inspired by TikTok, we’ve developed our version of a Spicy Beef Ramen dish that comes together to make a satisfying dinner in all of 15 minutes. You pretty much only need garlic, ginger, and garlic-chili sauce to flavor this dish (white pepper helps more than you’d think too!). From there, you can riff until your heart’s content: add soy sauce, finish with rice vinegar or fresh lime juice, garnish with cilantro, or top with a fried egg.


Ingredients

Scale

68 packs of ramen noodles, flavor packets discarded or set aside

3 tablespoons unsalted butter

2 tablespoon neutral oil, such as grapeseed

2 teaspoon sesame oil

12 cloves garlic, microplanes or minced

1 tablespoon grated ginger

2 lbs ground beef

2 teaspoons salt

2 teaspoons white pepper

2 tablespoons garlic-chili sauce, plus more to taste

Toppings of choice, such as toasted sesame seeds, fresh cilantro, lime wedges, a fried egg, etc (optional)


Instructions

1. Boil water and cook ramen noodles (without the flavor packets) according to package instructions. Drain well, saving a mugful of the cooking water. Return noodles to the empty pot and toss with the butter and some reserved noodle cooking water, just enough to keep the noodles slick and buttery. Set aside.

2. Add the neutral oil, sesame oil, and garlic to a large frying pan set over medium heat. Cook until the oil is hot and the garlic begins to sizzle, then add the ginger. Cook until fragrant, about 2 more minutes.

3. Add the ground beef to the pan and season with salt and white pepper. Cook, breaking it up with a wooden spoon or silicone spatula, until browned. As soon as all the meat is cooked through, add the garlic chili sauce and about 3 tablespoons of water. Stir and continue cooking until the meat is well coated and crispy in bits. Remove from heat and either portion out the noodles and scoop the beef on top or mix all together in the pan before serving.
