Meghan mentioned prepped ahead paninis that her husband can press at lunch time, but this style of sandwich can be cooked by tweens and teens to thanks to a panini press. This is Meghan’s favorite model of an easy to clean panini press.

Make Ahead Pizza Paninis

Ingredients

8 slices sourdough bread
4 ounces shredded mozzarella cheese
1/4 cup marinara sauce, plus more for serving
4 ounces sliced pepperoni, salami, or a combination of the two
optional: sliced peppers, pepperoncini, basil, or pickled red onion
Olive oil for grilling


Instructions

1. Assemble the sandwiches: On top of 4 slices of the bread, divide the cheese, tomato sauce, pepperoni, sliced peppers and basil, if using. Top each sandwich with more cheese and a second slice of bread.

2. Tightly wrap each sandwich in plastic, this help press the ingredients together. Tightly wrapped these sandwich will be ready and waiting for grilling for 4 days

3. Grill the sandwiches: Preheat your panini press for 10 minutes. Brush the panini press with olive oil and place the unwrapped sandwiches on the panini press and close tightly. Cook until the bread is grilled and the cheese is melted, 5 to 8 minutes.
