Vegan Chocolate-Peanut Butter Pudding

1/2 cup chocolate chips (use dairy-free chocolate for a vegan version)
1 lb silken tofu
2 tablespoons maple syrup
1 tablespoon creamy peanut butter
1/2 teaspoon pure vanilla extract


Instructions

1. Melt chocolate chips in the microwave or using a double boiler. Allow to cool to the touch.

2. Add melted chocolate, tofu, syrup, peanut butter, and vanilla to a food processor or powerful blender. Puree until completely smooth. It will be thin and pourable; don’t worry, it will firm up.

3. Transfer pudding to one large or four individual containers, cover, and allow to set in the fridge for at least 30 minutes before serving.

Notes

Note: You can swap the maple syrup for honey or other liquid of your choice.
