Air Fryer Salmon With Panko Crust

Ingredients

4 salmon fillets, about ¼ lb each
Salt and pepper
4 tablespoons butter, melted
2 tablespoon Dijon mustard
2 tablespoons maple syrup
2 teaspoons low-sodium soy sauce
1/2 cup Panko breadcrumbs
4 teaspoons chopped parsley


Instructions

  1. Place salmon fillets on a sheet pan or cutting board and pat dry. Season lightly with salt and pepper.

  2. Preheat the air fryer  to 350F / 190C. This should take about 5 minutes.

  3. Transfer salmon to the basket of the air fryer (you may have to do this in batches depending on how big your air fryer is). Cook for 5 minutes.

  4. In the meantime, whisk together melted butter, mustard, maple syrup, and soy sauce. Toss this mixture with the breadcrumbs and parsley, mixing until the breadcrumbs are evenly moistened.

  5. After the fish has cooked for five minutes, carefully (the basket of the air fryer will be very hot!) spoon the panko mixture over the fillets, keeping in mind that you’ll want to divide the breadcrumbs evenly between all 4 fish fillets.

  6. Continue cooking salmon until it flakes easily with a fork and the breadcrumbs have turned golden brown, 4 to 10 minutes depending on the thickness of your fish fillets.
