BLT’s make a fantastic school lunch and we upgrade the classic using our Spinach Pesto . We make assembling these super easy by batch cooking bacon (in the microwave or oven for easiest clean up) and meal planning Spinach Pesto Pasta with Lemony Ricotta. The bacon can be used for these wraps, breakfasts, and extra flavor in salads for the week. And when you make the Spinach Pesto Pasta, reserve some pesto for these wraps. Cook once, eat twice!
Ingredients
1 1/2 tablespoons mayonnaise
1 tablespoon Spinach Pesto
1 flatbread or large flour tortilla
3 strips bacon
2 leaves Romaine or Bibb lettuce
2 slices tomato
Instructions
- In a small bowl, using a whisk or fork, mix together the mayo and Spinach Pesto.
- Spread the pesto mayo onto the flatbread or tortilla and layer the bacon, lettuce, and tomato slices on top. Roll and cut in half or into pinwheels. Enjoy or pack up for lunch.
