Ingredients

For the honey ginger simple syrup: 

11/2 cups honey
1 cup water
1/4 cup chopped fresh ginger, about 1 (3-inch) hand
1 tablespoon finely zested lemon zest, from one lemon

For the Golden Rush:

2 ounces bourbon
3/4 ounce freshly squeezed juice from 1 lemon
3/4 ounce Honey Ginger Simple Syrup


Instructions

To make the Honey Ginger Simple Syrup:

1. combine the honey, water, ginger, and lemon zest in a medium saucepan. Bring to a simmer over medium-high heat. Simmer for 2 minutes and then remove from the heat. Cover the pan and steep for 1 hour.

2. Strain the syrup and discard the ginger and lemon bits. The syrup keeps well stored in an air-tight container in the fridge for up to 2 weeks.

To make a cocktail:

1. Combine the bourbon, lemon juice, and syrup in a cocktail shaker filled with ice. Cover and shake until well-chilled, about 20 seconds.

2. Strain into an ice-filled rocks glass.
