Greek Yogurt Breakfast Popsicles

Description

We can’t think of a better season to serve popsicles for breakfast than summer. These yogurt based popsicles are a win for parents with easy ingredients and lots of flexibility. Plus kids love the sprinkles so much they likely won’t notice the chia seeds mixed in! 


Ingredients

Scale

2 cups greek yogurt
¼ cup honey or maple syrup
2 tablespoon fruit jam, optional
2 tablespoons chia seeds
¼ cup rainbow sprinkles 


Instructions

  1. In a medium mixing bowl combine the Greek yogurt, honey, jam (if using) and chia seeds. Whisk together until smooth. 
  2. Fold the sprinkles into the yogurt mixture. 
  3. Divide the yogurt mixture between the cups of your favorite popsicle mold and add the popsicle sticks. 
  4. Freeze the popsicles for at least 12 hours, ideally overnight.

Notes

After freezing, the popsicles can be removed from their mold and stored in an airtight container for up to 3 months.
